About the Event
Who is this course designed for?
- Cheesemongers who have recently started their journey in cheese
- Retailers who would like to fine tun their knowledge of both theoretical and practical cheesemongering
- Those who are thinking about starting a career in retailing cheese
What you will learn?
We will cover a LOT in 5 days in the classroom, in the Mons caves, in a Mons shop and offsite on a farm.
You will learn about;
- How to be a good cheesemonger
- Sensory Analysis & describing cheese to customers
- Cutting small cheeses, larger pieces and breaking down full wheels (in theory and live in a Mons shop)
- Wrapping cheese for both display and the customer (in theory and live in a Mons shop)
- How to set up displays (in theory and live in a Mons shop)
- Cheesemaking
- Farming at a French Pedagogical Farm/Milk supplier to the Laiterie Cote Roanaise (Mons Dairy)
- HACCP & Food Hygiene
- Basic Affinage Concepts
Class size: Maximum of 6 students, minimum of 4 students
Tuition: €2800, which includes lodging, breakfasts and lunches, and ground transportation during the course.
